Turkey Black Bean Shepherd’s Pie

This is an update to one of my most popular recipes ever, Sweet Potato Shepherd’s Pie.  The addition of black beans ups the fibre and protein content making this a very filling, healthy, and delicious meal that my whole family loved.

Total prep time: about 20 minutes

Total cook/bake time: 30 minutes

Ingredients:

2 large sweet potatoes

1 lb ground turkey

1 can drained and rinsed black beans

sea salt, pepper, garlic powder, onion salt to taste.  I used about ½ tsp of each

2 Tablespoons Greek Seasoning

1 cup beef broth (or any homemade bone broth)

1 cup water

2 teaspoons cornstarch mixed with 2 teaspoons water

1 red pepper

1 small yellow onion

1 cup frozen peas

The first thing you need to do is set a large saucepan of water on the stove to boil, and wash, peel (if you want to), and chop your sweet potato and add it to the water immediately.  The potato and the water will come to a boil while you make the other layers and be ready when you need them for the top.

Bottom layer:

1 lb ground turkey

sea salt, pepper, garlic powder, onion salt all to taste.  I used about ½ tsp of each

2 Tablespoons Greek Seasoning

1 cup beef broth (or any homemade bone broth)

Brown meat and drain if necessary.  Add broth, seasoning, beans, and water and bring to a boil.  Once boiling, add cornstarch and water to thicken.  Pour into bottom of an uncreased casserole or baking dish.  I used my 9 x 13 dish here.

Veggie Layer:

1 red pepper

1 small yellow onion

1 cup frozen peas

(Add any extra veggies you have lying around – this is a great produce user!)

Preheat oven to 350F.  Chop veggies so they are all roughly the same size (I enjoy a rougher chop – about the size of half a dime).  Mix together and spread evenly over the meat layer.

Sweet Potato Layer:

Carefully drain most of the liquid from the sweet potatoes and mash with a potato masher or food processor until smooth.  Spread evenly over top the vegetable layer.

Bake in oven at 350F 30-45 minutes.

The longer this cooks the soft the veg layer will be. We eat this with hot sauce.
