Cucumber Salad Recipe

This is inspired by a recipe my mother in law makes that is a family favourite.  I use and different oil and vinegar but it’s definitely all her!  Thanks Di!

You will need:

1 large cucumber or 2 medium cucumbers

1Tbs Extra Virgin Olive Oil

2Tbs Bragg’s Apple Cider Vinegar (I like it tangy, use less if you want a milder flavour)

1/2tsp Raw Honey

Salt & Pepper to taste (I’m generous with both, usually 1/2tsp each)

Add oil, vinegar, honey and salt & pepper to the bowl you will to serve your salad in and whisk until combined.  Slice the cucumber into medallions, add to the dressing and toss.  Serve immediately or put it in the fridge to marinade and eat within an hour.

So simple, so yummy!  This is a side dish for a lot of meals in our home.  Let me know if you try it and enjoy it!
