Confession: grocery store rotisserie chickens are staple in my life, and I’m always looking for new ways to use them. This is a quick, easy recipe that tastes amazing and is toddler approved. You will need:
The meat of 1/3-1/2 a rotisserie chicken, cut into bite sized pieces
2 cups rice noodles
2T 100% peanuts peanut butter
2T Bragg’s Liquid Aminos or Soy Sauce
1tsp red curry paste – I would use more if my tiny people didn’t also need to eat dinner 😉
1tsp chopped garlic
8 cups chicken broth
2 cups bean sprouts
To garnish:
lime wedges
crushed peanuts
mint sprigs or cilantro
Sriracha Pepper Sauce
Directions: Cook your rice noodles according to package directions and drain. In the bottom of a large saucepan melt together the peanut butter, soy sauce, curry paste, and garlic until well combined. Mix in broth and chicken and heat to desired temperature. Put half of noodles in each large bowl and top with half of the bean sprouts. Ladle broth and chicken mixture over the noodles and garnish to taste. Yeild: 2 giant bowls of delicious soup, or one giant bowl and four toddler sized.
