Winner Winner Chicken Dinner

This is a go to recipe I make often for family and company. Chicken thighs are typically much cheaper than breasts and I find them much more flavourful. You can also use this marinade/glaze on pork chops or tenderloin. I adjust the amounts of each ingredient depending on my mood for the day!

Amber’s Honey Garlic Chicken

6-9 bone in skin on chicken thighs (or other protein)

1/4 cup Bragg’s Soy Sauce

1/4 cup Bragg’s Raw Apple Cider Vinegar

1tsp or 2 cloves chopped garlic

1tsp raw honey

2Tbsp Organic Ketchup

1 tsp sesame oil

1tsp pepper sauce

Sea salt & pepper to taste

Preheat oven to 325F. In a ceramic baking dish, whisk together soy sauce, vinegar, garlic, honey, pepper sauce, and oil.  Place thighs in sauce, turning a few times to coat with sauce. You can do this in the morning or the night before for more flavour, but it is also delicious mixed and cooked immediately. After thighs are coated and skin side up, salt and pepper to taste. Bake uncovered in 325F oven for 60 minutes or until meat is full cooked.

I usually serve this with sprouted brown rice and asparagus or an adaptation of my husband’s favourite salad that his mom makes.

Cucumber Salad
1Tbs extra virgin olive oil
1Tbs Bragg’s Raw Apple Cider Vinegar
1/2 tsp raw honey
Salt and pepper to taste
1 English cucumber

Whisk first 5 ingredients together in a small bowl. Slice cucumber thinly and add to dressing. This is good if it has an hour or two to soak up the vinegar and oil mixture.
